Ceylon Cinnamon

Madagascar cinnamon comes from an evergreen tree belonging to the Lauraceae family. Known botanically as Cinnamomum zeylanicum, the cinnamon tree grows naturally in Madagascar, where it can be found on farmers’ plots through natural seed dispersal. It is also increasingly cultivated for its aromatic bark, which is harvested for spice production and essential oil extraction.

MADAGASCAR CINNAMON

A Finer Kind of Spice

Ceylon cinnamon is recognised for its delicate bark, layered texture and balanced aromatic profile. Its gentle sweetness and subtle floral notes offer a different character from the more robust flavour of Cassia.

What Makes Ceylon Cinnamon Different?

Not all cinnamon is the same. Ceylon cinnamon generally has thin, layered bark and a delicate flavour, while Cassia tends to have thicker bark and a more intense, pungent taste. These differences influence the character each variety brings to a recipe.

From Bark to Quill

After harvesting, the bark is separated from the branches and prepared for drying. Skilled handling helps shape the characteristic quills while preserving the bark for further processing.
