A GUIDE TO MORINGA

Choosing the Right Combava Format

Combava (Citrus hystrix) offers more than one usable ingredient. Its leaves and fruit peel are both valued for their distinctive citrus aroma, but they are not interchangeable.

The leaves are recognised for their strong citrus fragrance and are used to bring aromatic character to food preparations.

The peel, including the zest, contains aromatic compounds that contribute to the fruit's characteristic citrus profile. It can be supplied as dried zest or ground into powder, depending on the processing requirements.

Understanding Combava Quality

For dried botanical ingredients, moisture content is an important quality parameter. Excess moisture can encourage mould development and compromise product stability during storage.

However, moisture alone does not determine quality. Appearance, cleanliness and aroma also provide useful indications of the product's condition.

Combava in Food Applications

Ground Combava Peel

A powdered ingredient that can be measured and incorporated directly into dry blends, seasoning mixes and other formulations requiring finely ground citrus peel.

Dried Combava Leaves

A whole-leaf format suited to applications where the leaves can be infused or steeped to transfer their aromatic properties into a preparation.

Combava Zest

Dried peel that can be used where a recognisable citrus-peel ingredient is required. Its final particle size and preparation method will depend on the intended application.
